Before you all turn your nose up and click off this blog post for me suggesting cauliflower instead of normal rice - just give it a try!
It's no secret - I am trying to get healthier and loose weight and one of the healthy swap options is to use cauliflower rice instead of white/brown rice. All you need to do it grate up the cauliflower (easier with a food processor) and lightly fry it until it's a soft as you like.
I added some chilli flakes in mine for a little bit of a kick.
Would you try cauliflower rice?
