FOOD: Vita Coco Coconut Oil

The many uses of coconut oil have impressed me and there's always new ones cropping up all over the place. I don't think there's ever been a time where hints, tips and hacks were so widely shared, helped along by the ease of sharing a post on Facebook or a retweet on Twitter.

I made the switch to coconut oil about a year ago when I was reading up on the benefits of it, not just in cooking but for cosmetic reasons too. There's been a huge shift in the trend towards coconut oil from the cheaper alternatives such as olive and sunflower. Coconut oil contains a huge amount of vitamins and minerals - such as Choline, Vitamin E, Vitamin K, Iron, Stearic and Lauric Acid and these help to nourish the body from the inside if you cook with it and from the outside if you use it in your beauty routines.
Coconut oil lasts for ages, we purchased our last pot around 4 months ago and we use it everyday. I even took a couple of scoops out into a travel pot for use on my hair, face and for oil pulling. Vita Coco have sent me a mini pot alongside the normal size and I will fess up to doing a little squeal in the office when I saw the cute pot of coconut oil. What is my life!

Anyway, oil pulling is an odd one and I really have to psych myself up to do it, but I do see the benefits. I don't really find that my teeth look whiter but my mouth feels so squeaky clean afterwards.
Over the next few weeks I'm going to be documenting just what I use coconut oil for and using the Vita Coco Coconut Oil. I'm hoping I can try all the various uses of coconut oil and find some new ways that I've not tried before.

What's your favourite way to use coconut oil?
